Pumpkin Pie Smoothie

I was browsing through The Kitchn’s website when I saw their recipe for a pumpkin pie smoothie, and inspiration struck. I had some pumpkin puree in the freezer from last fall’s harvest, and wanted a new way to prepare it.

Ingredients:

2 cups pureed pumpkin (plain, NOT pumpkin pie filling)

1 1/4 cup of milk

2 frozen bananas

1/4 cup sunflower seeds

1/4 cup maple syrup

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp ground cloves

1/4 tsp ground nutmeg

Directions:

Place all ingredients in the blender and blend until smooth for the easiest breakfast or snack ever. Even better? You’ll be sneaking in a couple of servings of fruit and getting a heaping helping of fiber and vitamin A from the pumpkin. You could sub 2 tsp of pumpkin pie spice for the cinnamon/ginger/cloves/nutmeg mixture if that’s what you have in the pantry.
