Delicate young green beans and sweet cherry tomatoes are roasted and dressed with Parmesan cheese in this delicious dish. Serve it as a side, or plan a meal around this satisfying vegetarian recipe. Best of all, it comes together with just a few minutes of prep and cooking.
Green beans, washed with ends trimmed off (look for thin, young green beans)
Cherry tomatoes, tops removed
Preheat oven to 425F. Arrange the green beans and cherry tomatoes in a thin layer on a baking sheet. Drizzle olive oil over the vegetables and sprinkle with garlic salt and black pepper, to taste.
Roast for 15 – 20 minutes, or until the green beans are blistered and browned. Toss with grated Parmesan cheese and serve immediately.
